Summary
A laboratory study of simulated gastrointestinal digestion of dulse (Devaleraea inkyuleei), an edible red seaweed, together with computational modelling. Digestion released EVYR, a four-amino-acid peptide, which inhibited DPP-IV, the enzyme that breaks down incretin hormones and is the target of diabetes drugs such as sitagliptin. The work was done in vitro and by computer. It was not tested in people.
